Vegan Guacamole Veg Bowl

Hello guys so this is a very simple and easy guacamole bowl that is filling, delicious and healthy too.

All you’ll need is
– 2 avocados
– 1 small red onion, diced
– 1 clove of garlic, minced
– 1 ripe tomato, diced
– 1 lime, juiced
– 1 cucumber
– spinach
– salt and pepper,to taste
– large bowl

First, cut the avocado in half and remove the pip. I cut them into cubes and just scooped it in a bowl. I like some of the avocado to have chunky bits. So i mashed 1 and a half avocado up and left the rest in cubes. Then just stir in the diced tomatoes, the garlic, the onion and lime juice.
Now i wanted to add more veggies into it, so i had a layer of spinach at the bottom and half the cucumber. I put the guacamole on top of the spinach and cucumber mix. Then sliced the cucumber into coins and placed it around the bowl to make it look nice. Season with the remaining lime juice and add some salt and pepper to taste. You can also add some herbs for that extra kick of flavour.
